I am finding a video editor for a project in our class. What is the best, easy to use video editing software for Windows XP?

lots of video editors are committed to keep up
with the latest enhancements. That means the latest
DirectX, that immediately means XP is no longer catered for.

This gives you a problem in that you may need to look for OLD Versions.
You may also need to comply with minimum system specifications that
may not be achievable.

Probably the best i could recommend would be Corel VideoStudio x4
it can be picked up quite cheaply still. And should be just about
achievable on XP SP3 see min sys req in link below.
